CAJUN DELIGHT (Brown Rice) | |
2 tbsp. oil or butter 1 c. brown rice 3 c. boiling water 1 tbsp. oil or butter 1 clove garlic, minced 1 onion, chopped 1 green pepper, chopped 1 stalk celery, chopped 1-2 jalapeno peppers, chopped fine 1/2-1 c. sliced mushrooms 1 c. tomato sauce Grated cheese Heat heavy skillet. Add the oil and rice; saute until rice is golden. Add the boiling water. Cover and simmer 25-30 minutes. Heat another skillet. Add oil and chopped vegetables and saute 5-10 minutes. Add the tomato sauce and rice and simmer 5 more minutes. Top with cheese. Cover and steam until the cheese is melted. Serves 4-6. |
