WHOOPIE PIES | |
PIE: 1 egg 1 c. sugar 1 c. milk 6 tbsp. baking cocoa 6 tbsp. Crisco shortening 1 tsp. vanilla 1 1/4 tsp. baking soda 2 1/4 c. flour FILLING: 3 c. confectioners' sugar 3/4 c. Crisco shortening 6 tbsp. marshmallow fluff 2-3 tbsp. milk Preheat oven to 400 degrees. Pie: Mix in large bowl the egg, sugar, milk and shortening. (Mixture will be lumpy.) Add the cocoa and vanilla and baking soda. Slowly add the flour (mixture will be smooth, but thick). Drop by tablespoon onto ungreased cookie sheets. Bake for 10 minutes. Remove from oven and let cool completely. Filling: Mix the confectioners' sugar, Crisco and fluff. Add the 2-3 tablespoons milk (or more) for a smooth (not runny) consistency. Spread between two pies and enjoy! Note: Wrap each individually with plastic wrap for freshness or freezer storage! |
