GRECIAN GREEN BEANS | |
1 lb. green beans fresh or frozen 1/2 c. olive oil 3/4 c. chopped onion 1 clove garlic, firmly minced 1 (8 oz.) can tomato sauce 1 c. water 1/2 tsp. dried mint leaves Saute onion in olive oil until just golden brown; add the green beans (thawed, if frozen beans are used) and saute until they are bright green in color, then add remaining ingredients; cover and simmer until beans are tender. Stir or toss the beans and onions constantly while sauteing to the bright green color. Serves 6 to 8. |
