PEACH CRUMB PIE 
PIE SHELL INGREDIENTS:

1 c. flour
1/2 tsp. salt
1/3 c. shortening
3 tbsp. ice water

FILLING:

8 peaches, pitted, skinned & sliced
1/2 tsp. vanilla
1/2 c. sugar, if peaches are tart

CRUMB TOPPING:

1/2 c. flour
1/2 c. sugar
2 tbsp. cinnamon
1/2 stick soft butter

For Pie Shell: Mix flour, salt, cut in shortening. Add water 1 tablespoon at a time. Shape into ball. Place on floured surface and roll into shell with floured rolling pin. Put in pie pan and poke with fork sides and center.

Mix filling. Pour into pie shell. Make crumb topping by mixing flour, sugar and cinnamon and cut butter into topping. When crumbly pour over filling. Bake at 350 degrees for 45 minutes or until top is lightly brown.
