MICROWAVE FIESTA TAMALE PIE 
1 (8 1/2 oz.) pkg. corn muffin mix
1 egg
1/3 c. milk
1 lb. hamburger
1/4 lb. pork sausage
1/4 c. chopped onion
1 clove garlic, minced
16 oz. stewed tomatoes, drained
12 oz. whole kernel corn
6 oz. tomato paste
1 1/2 tsp. chili powder
1 tsp. salt
1/4 c. pitted ripe olives, sliced
1/2 c. shredded cheddar cheese
Dash of paprika

Mix corn muffin mix, egg, and milk until moist; set aside. In an 8 x 8 baking dish place hamburger, sausage, onion, and garlic. Microwave on HIGH until meat is browned (5-9 minutes) stirring once to break up meat.

Drain; stir in stewed tomatoes, corn, tomato paste, chili powder, and salt. Microwave on HIGH until mixture thickens (4-8 minutes). Stir in olives; spread corn muffin mix over the top. Microwave on MEDIUM HIGH (5 minutes); increase to HIGH and microwave until center is set (4-8 minutes).

Sprinkle with cheese and paprika during the last 2 minutes of cooking time. Rotate pan every 2 minutes to insure even cooking. Serves 4-6 people.

Since microwave ovens vary in power, you may need to adjust your cooking time.
