IRISH POTATO CASSEROLE 
1/4 c. butter
2 tbsp. green pepper, chopped
3/4 c. cheese (cheddar) or 1 jar jalapeno Cheez Whiz
1 1/2 c. milk
1 med. onion, chopped
2 1/2 tbsp. flour
1 tbsp. pimiento, chopped
3 c. potatoes, cooked & chopped

Cook onion and pepper in butter for 5 minutes. Add pimiento and flour; stir well. Add milk; stir. Cook until thick. Salt and pepper to taste. Add potatoes. Pour into greased 1 1/2 quart casserole. Top with cheese. Bake 30 minutes at 350 degrees. Serves 6.
