OATMEAL MUFFIN CAKE 
2 c. quick cooking rolled oats
2 c. milk
2 c. sifted all-purpose flour
1 c. sugar
6 tsp. baking powder
1 tsp. salt
2 well beaten eggs
1/2 c. salad oil (Crisco, Wesson, etc.)

Combine rolled oats and milk; let stand 15 minutes. Sift together flour, sugar, baking powder, and salt in 1 bowl. Combine egg, oil, and oatmeal mixture. Add all at once to dry ingredients, stirring just to moisten. Pour into greased 9 x 13 inch pan. Bake at 400 degrees until done, approximately 35 to 45 minutes.
