OATMEAL CHOCOLATE CHIP CAKE 
1 3/4 c. boiling water
1 c. Quaker quick oats
1 c. lightly packed brown sugar
1 c. sugar
1/2 c. butter
2 eggs
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. cocoa
12 oz. pkg. chocolate chips
3/4 c. chopped nuts (optional)

Pour boiling water over oatmeal. Let stand at room temperature for 10 minutes. Add both sugars and butter. Add eggs and beat well. Add flour, baking soda, salt and cocoa. Mix again. Add half of chocolate chips and blend in. Pour into greased 9 x 13 pan. Sprinkle remaining chocolate chips and nuts over top.

Bake in a preheated 350°F oven for 35 to 40 minutes (80 minutes in tube pan).
