BUTTERSCOTCH COOKIES 
2 1/2 c. sugar
2 1/2 c. brown sugar
2 1/2 c. shortening
5 eggs
2 tbsp. vanilla
1/4 c. milk
5 c. sifted flour
2 1/2 tsp. baking soda
2 1/2 tsp. baking powder
2 1/2 tsp. salt
5 c. oatmeal

Combine sugars, shortening, eggs, vanilla and milk. Mix well. Sift together flour, soda, baking powder and salt. Add to egg mixture. Beat until smooth. Add oats and mix well. Bake on greased cookie sheet about 2 inches apart at 350 degrees for about 15 minutes. Chocolate chips and nuts may be added for a variety. Also coconut if you would like it.
