SHRIMP SCAMPI STYLE 
3/4 lb. med. shrimp, raw, shelled & cleaned
6 tbsp. butter
1 tbsp. green onion, minced
1 tbsp. olive oil
4-6 cloves garlic, minced
2 tsp. lemon juice
1/4 tsp. salt
2 tbsp. parsley, minced
1/4 tsp. lemon peel, grated

Pat shrimp dry with paper towels. Set aside. Melt butter in a wide frying pan over medium heat. Stir in onion, oil, garlic, lemon juice and salt. Cook until bubbly. Add shrimp to pan and cook, stirring occasionally until shrimp turn pink (4 to 5 minutes). Stir in parsley and lemon peel. Makes 2 servings.
