SKILLET FRIED POTATOES 
8 lg. potatoes
1/2 c. olive oil

Peel and slice in pieces about 1/4 inch thick. Cover bottom of skillet with about 1 inch of oil. Place layer of potatoes, salt, and pepper until all potatoes are used up. Put skillet on hot stove and cook 35 minutes with cover on. When ready to serve, drain off excess oil and turn upside down on plate. Very delicious.
