PINWHEEL APPLE CAKE 
4 apples, peeled & cored, sliced crosswise about 1/4 inch thick
1/3 c. sugar
1 tsp. flour
1 tsp. cinnamon
1 1/2 c. cake flour
1/2 c. sugar
2 eggs
1/2 tsp. baking powder
6 tbsp. butter
1 tsp. vanilla

Roll apple rings in 1/3 cup sugar, flour, and cinnamon; set aside. In large bowl sift flour, sugar and baking powder. Add butter until coarse meal. Mix 2 eggs, well beaten to the flour with 1/2 cup milk. Pour into greased and floured pan (7 1/2 x 11 1/2 inch). Arrange apple rings lapping in rows on top. Bake 40 minutes at 350 degrees. Check if done. Serve with ice cream or Cool Whip.
