1 lg. head cabbage 2 lbs. ground beef 4 tbsp. cooked rice 4 tbsp. chopped onion 2 tbsp. lemon juice 2 tsp. salt 4 tsp. pepper 3 tbsp. sugar 4 tsp. paprika 1/2 c. vinegar Bacon fat 1. Start early in the day. Boil cabbage in large pot until leaves separate. 2. Mix beef with all ingredients except vinegar and bacon fat. 3. Roll cabbage leaves with about 1 to 2 tablespoons of beef mixture, tucking ends in. 4. Melt bacon fat in large pot. Place cabbage rolls carefully in pot, seam side down. Pour vinegar over the rolls and simmer until beef is cooked through. This is the kind of dish that improves with a lengthy simmer and is even better reheated the next day. |
