FLANK STEAK AND ONIONS | |
1 flank steak, all visible fat removed 1 lg. red onion 1 beef bouillon cube or 1/2 c. beef broth 1 tbsp. peanut oil 2 tbsp. cooking sherry, approx. 2 cloves garlic, crushed Salt and pepper steak before broiling. Score flank steak 1/4 inch deep diagonal cuts approximately 2 inches apart. Broil approximately 5 minutes until medium rare. Thinly slice steak and set aside on plate. Thinly slice onion and saute over medium heat in peanut oil until almost clear. Add crushed garlic, saute until onions begin to brown. Remove from pan. Add to pan broth, cook down 1/3 off the liquid. Return onions to pan. Add cooking sherry and continue to saute 2-3 minutes. Spoon onions over meat, then pour "sauce" over all. Remember to cut steak against the meat's grain. Makes 4-5 servings. |
