PUMPKIN CHEESECAKE PIE 
1 (8 oz.) pkg. cream cheese
1/4 c. sugar
1/2 tsp. vanilla
1 egg
1 1/4 c. pumpkin
1/4 tsp. ginger
1 (9 inch) pie shell (unbaked)
1 tsp. cinnamon
1/4 tsp. nutmeg
Dash of salt
1 c. evaporated milk
1/2 c. sugar
2 eggs, well beaten

Preheat oven to 350 degrees. Mix together softened cream cheese, 1/4 cup sugar and vanilla. Add egg and mix well. Spread on pastry shell and chill.

Combine pumpkin, 1/2 cup sugar and spices. Add milk and eggs. Mix well. Pour over cream cheese mixture. Bake 1 hour. Serves 6-8.
