MANDARIN GREEN SALAD 
1/4 c. almonds
1 tbsp. plus 1 tsp. sugar
1/4 head lettuce
1/4 head Romaine lettuce
2 med. celery stalks
2 green onions
1 (11 oz.) can mandarin oranges

SWEET AND SOUR DRESSING:

1/4 c. vegetable oil
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. parsley
1/2 tsp. salt
Dash of pepper
Dash of red pepper sauce

Cook almonds and sugar over low heat, stirring constantly, until sugar is melted and almonds are coated. Cool and break apart. Store at room temperature. Make the dressing and refrigerate. Tear lettuce into bite-size pieces. Chop celery and thinly slice the onions. Drain the mandarin oranges. Add everything together and toss. Serves 4.
