SPINACH AFRICAN 
1 c. chopped ham
2 (10 oz.) chopped spinach, drained
1/4 c. chopped onion
1 bell pepper
Hot pepper, optional
2 tbsp. oil
Season to taste

Heat oil. Combine onion, pepper, ham and season. Fry for 5 minutes. Drain water from spinach. Add spinach and cook until done. Make about 4-6 servings.
