COCONUT MUFFINS | |
2 c. Bisquick biscuit mix 2 tbsp. sugar 1 egg, beaten 3/4 c. milk 1 c. shredded coconut (I use the frozen) 2 tbsp. Crisco, melted Preheat oven to 400 degrees. Put Bisquick in medium bowl. Add rest of ingredients and mix until all are moistened but batter still looks lumpy. Fill greased or paper-lined muffin cups 2/3 full. Bake 15 minutes. |
