PUMPKIN COOKIES 
4 c. flour
2 c. old fashioned oats, uncooked
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
2 c. butter, softened
2 c. firmly packed brown sugar
2 c. granulated sugar
2 eggs, slightly beaten
2 tsp. vanilla extract
2 c. solid pack pumpkin
2 c. assorted raisins
Chocolate morsels, peanut butter candies or nuts

Preheat oven to 350 degrees. Combine flour, oats, baking soda, cinnamon and salt. Cream butter. Gradually add sugar, beating until light and fluffy. Add eggs and vanilla. Mix well. Alternate additions of dry ingredients and pumpkin, mixing well. After each addition, stir in assorted morsels. Drop dough onto lightly greased cookie sheet; spread into pumpkin shape, using a thin metal spatula. Add a bit more dough to form stem. Bake 20 to 25 minutes, until cookies are firm and lightly browned. Cool on racks. Decorate with icing. Yields: 40 to 45 cookies.
