PUMPKIN BREAD | |
2/3 c. shortening 2 2/3 c. sugar 2/3 c. water 2 tsp. baking soda 1/2 tsp. baking powder 1 tsp. cloves 4 eggs 1 (16 oz.) can pumpkin 3 1/3 c. flour 1 tsp. cinnamon 2/3 c. raisins, optional 2/3 c. walnuts, optional Beat shortening and sugar in large bowl until fluffy. Stir in eggs, pumpkin and water. Sift flour, soda, baking powder, cinnamon and cloves. Mix flour into shortening. Fold in raisins and walnuts. Pour batter into 2 greased 9x5 loaf pans. Bake 1 hour and 10 minutes at 350 degrees. Test with toothpick in center. When toothpick comes out clean, the bread is done. |
