DOUBLE CHOCOLATE MINT CHIP
COOKIES
 
10 oz. pkg. mint flavored chips
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter, softened
1/2 c. brown sugar
1/4 c. sugar
1/2 tsp. vanilla
1 egg
1/2 c. nuts

Preheat oven to 375 degrees. Melt 3/4 cup chips; stir until smooth. Cool to room temperature. In bowl, combine flour, baking soda and salt. Then set aside. In bowl, beat butter, brown sugar, sugar and vanilla until creamy. Add melted morsels and egg; beat well. Gradually blend in flour mixture. Stir in remaining morsels and nuts. Drop by a rounded tablespoon onto ungreased cookie sheet. Bake for 8 to 9 minutes. Cool 2 to 3 minutes before removing from pan.
