TEXAS RICE 
1 1/2 lbs. ground beef
2 cans cream of mushroom soup
8 to 10 servings Minute Rice
1 lg. jar sliced mushrooms
2 cans stewed tomatoes
3 c. shredded cheddar cheese
1 onion, diced

Brown and drain beef with diced onion. Salt and pepper to taste. Mix beef, mushroom soup, stewed tomatoes, 1/2 of cheese and rice into large baking dish (10 x 14 inches). Mix thoroughly. Sliced mushrooms also may be added at this time (they are optional). Spread remaining cheese on top and bake at 350 degrees for 1 hour or until bubbly.
