SALMON LOAF | |
1 c. flaked salmon, fresh or canned 1 c. soft bread crumbs 1 c. scalded milk 2 eggs, separated and beaten separately 1 tbsp. melted butter 1 tsp. lemon juice 2 tbsp. finely minced onion 2 tbsp. finely minced green pepper Soak bread crumbs in scalded milk. Combine the 2 beaten egg yolks with the salt, butter, lemon juice, onion, pepper and salmon. Add the bread crumb mixture to the egg mixture. Beat the 2 egg whites until stiff and then fold the egg white into the egg yolk and salmon mixture. Pour into buttered loaf pan and bake at 350 degrees for 45 minutes or until firm. |
