TURKEY CHILI 
1 lg. onion, chopped
1 sm. green pepper, chopped
2 tbsp. vegetable oil
2 turkey thighs or 3 lb. ground turkey
2 (8 oz.) cans tomatoes
2 cloves garlic, pressed
2 tbsp. chili powder
15 1/4 oz. can red kidney beans, rinsed & drained
3 c. hot cooked rice
1/4 c. soy sauce

Saute onion and green pepper in hot oil until onion is soft. Stir in turkey and cook until no longer pink. Add tomatoes, soy sauce, garlic and chili powder. Cover and simmer for 30 minutes, stirring occasionally. Stir in kidney beans and continue simmering for 15 minutes. Serve chili over rice. Serves 6.
