IRISH COFFEE 
4 strips orange peel
4 strips lemon
16 whole cloves
1 stick cinnamon
2 tsp. sugar
5 oz. Irish whiskey
1 1/2 c. strong hot coffee
Dash confectioners sugar
1/4 c. whipped heavy cream

Use 2 (8 ounce) stemmed goblets, mugs or cups. Stud the strips of orange and lemon peels with two cloves each and place them in a skillet or chafing dish with the stick of cinnamon and 2 teaspoons sugar. Set over moderate heat stirring occasionally with a wooden spoon until the sugar has melted; pour the Irish whiskey into the pan and light a match to the liquid. Be sure to step back since the flame will flare up instantly. Pour in the hot coffee at once and let it come to a simmer. Remove from heat. Rub the cut edge of a strip of lemon peel around the inside of each glass or mug and sprinkle the rim of the container with sugar. Pour in the coffee. Top each serving wit whipped cream.
