SQUASH FRITTERS 
2 c. grated raw summer squash
1/2 c. finely chopped onion
2 tsp. sugar
1/2 tsp. salt
Pepper to taste
6 tbsp. flour
2 eggs, beaten
2 tbsp. melted butter

Combine first 6 ingredients. Stir eggs into square mixture. Add butter. Drop fritter batter by tablespoons onto greased griddle or skillet. Cook until brown; turn and brown on other side. 6 servings.
