VEGETABLE CHEESE CHOWDER 
1 c. potatoes, peeled and diced
1/2 c. chopped carrots
1/2 c. chopped celery
1/2 c. chopped onion
1/2 c. chopped green pepper
4 tbsp. butter
Salt and pepper to taste
3 c. chicken broth
1/2 c. flour
2 c. milk
3 c. grated Cheddar cheese
1 tbsp. parsley

Saute vegetables in butter. Add 3 cups chicken broth and simmer 30 minutes uncovered.

Mix flour in milk and add to broth mixture. Add grated cheese and parsley. Simmer until thick and bubbly. You may add broccoli, cauliflower, shrimp or ham.
