ONION, HAM AND CHEESE CHOWDER 
2 c. potatoes, peeled & cubed
1/2 c. chopped onion
3 tbsp. butter
3 tbsp. all purpose flour
Dash of pepper
3 c. milk
1/2 c. cooked ham, chopped
1 1/2 c. (6 oz.) sharp cheese, grated

Cook potatoes in boiling water until tender, about 10 minutes. Drain and reserve liquid, adding enough water to make 1/2 cup. In saucepan, cook onions in butter until tender but not brown. Stir in flour and pepper. Add milk and potatoes and water, all at once. Cook until thick and bubbly. Add ham and cheese. Stir to melt cheese and salt to taste. Serves 8.
