GRITS SOUFFLE 
1 c. grits
3 c. water
Salt, to taste
1 c. milk
1 c. grated cheese
3 eggs, separated
1/2 c. butter

Place grits in water; bring to boil. When done, add salt, milk, cheese and well-beaten egg yolks. Stir. Fold stiffly beaten egg whites into mixture. Pour into buttered casserole, then pour melted butter on top. Set in pan of hot water in 350 degree oven for 45 minutes. Invert contents of mold onto platter to serve.
