SCALLOPED OYSTERS 
1 pt. pacific oysters
3 tbsp. butter
3 tbsp. flour
1/2 c. light cream
1/2 c. chicken steak
1/3 c. sauterne or other white wine
1 tbsp. lemon juice
Dash nutmeg
Salt and pepper to taste
2 c. croutons, toasted golden
1/4 c. Parmesan cheese
Paprika

Make white sauce - stir in wine and lemon juice, season and add nutmeg. Grease casserole, drain oysters and place 1/2 in casserole, then 1/2 croutons, then 1/2 sauce. Repeat layers. Sprinkle cheese over and dust with paprika. Bake at 450 degrees 20 minutes. Serves 4. Wonderful holiday food; family favorite.
