TIM'S FAVORITE FLAP JACKS 
2 c. flour
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
2 c. milk
6 tbsp. melted butter
4 lg. eggs, separated

Combine flour, sugar, baking powder and salt. Beat together milk, butter and egg yolk. Stir into flour until moist. Beat egg whites until stiff peaks form. Fold into batter. Spoon about 1/3 cup on hot oiled skillet for each flapjack.
