TORTELLINI MINESTRONE 
1 1/2 to 2 lb. Italian sausage
6 c. beef broth
1 c. chopped onion
1/2 c. dry red wine (optional)
2 c. carrots
1 c. celery
1 c. ketchup
1 tsp. Italian seasoning
2 cloves garlic
2 c. zucchini
1/2 to 1 lb. tortellini
1 green pepper
1/4 c. parsley

Brown sausage, drain. Add broth and next 7 ingredients. Bring to boil. Simmer uncovered 30 minutes. Skim fat. Stir in zucchini, tortellini, pepper and parsley. Simmer covered for 35 to 40 minutes.

Sprinkle with Parmesan cheese.
