DATE - PIN WHEEL COOKIES 
1 c. shortening
2 c. brown sugar
3 eggs, well beaten
4 c. sifted flour
1/2 tsp. salt
1/2 tsp. baking soda

Filling:

2 1/2 c. dates (chopped)
1 c. sugar
1 c. boiled water
1 c. chopped walnuts

Cream shortening. Add sugar gradually, add eggs - beat well. Add rest of cookie ingredients. Divide mix into 2 parts and roll out about 1/4-inch thick. Combine ingredients for filling in sauce pan and cook until thick. Let cool slightly. Spread filling on dough and roll.

Makes 2 rolls. Chill overnight and cut into thin slices.

Bake at 400°F for 10-12 minutes.

Makes 6 dozen.
