SOUTHERN CARROT CAKE 
3 c. grated carrots
2 c. sifted all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. sugar
1 1/2 c. salad oil
4 eggs

Grate the carrots, cover and set aside. Sift together the flour, soda, cinnamon and salt. In another bowl, mix together the sugar, salad oil and eggs. Add the carrots. Add the dry ingredients to the sugar mixture and mix well. Divide the batter among 3 layer cake pans that have been thoroughly greased. Bake at 350 degrees about 30 minutes or until it tests done. Cool, then place on racks. Fill and frost with Southern Carrot cake filling.

FILLING:

1 (8 oz.) pkg. cream cheese
4 tbsp. butter
1 lb. powdered sugar
1 c. pecans or black walnuts, broken into pieces
2 tsp. vanilla

Cream together the butter and cream cheese. Add the sugar and mix well. Add nuts and vanilla.
