SWORDFISH WITH BASIL 
4 (4 oz.) swordfish steaks
1/4 c. Chablis or other dry white wine
1 tbsp. chopped fresh basil
1 tsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
2 cloves garlic, minced
4 (1/8") slices purple onion, separated into rings
4 (1/4") slices lemon
Fresh basil sprigs (opt.)

Place fish in a shallow dish. Combine next 6 ingredients; stir well, and pour over fish. Cover and marinate in refrigerator 15 minutes, turning fish once.

Drain, reserving marinade. Place fish on a microwave-safe baking rack. Spoon marinade over fish; top with onion rings and lemon slices. Cover with wax paper. Microwave at High 5 to 6 minutes or until fish is done. Let stand, covered, 1 minute. Drain. Garnish with basil sprigs, if desired. Yield: 4 servings, about 151 calories per 3 ounce serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
