HONEY-DIJON PASTA SALAD 
8 oz. fancy shape pasta
1 tbsp. olive oil
2 c. fresh broccoli florets
1/2 c. shredded fresh carrot
1/3 c. red onion slices, halved
Honey-Dijon dressing as follows

Honey Dijon dressing: Whisk together 1/4 cup red wine vinegar, 1/2 cup olive or vegetable oil, 2 tablespoons of honey, 2 tablespoons Dijon style mustard. Blend well. Makes 3/4 cup dressing.

Cook pasta according to directions. Rinse in cold water, drain well. In large bowl toss pasta with oil, add carrots, broccoli, onions, mix well. Cover; chill stirring occasionally. Serve it on a bed of lettuce. Spoon dressing over it. Serves 6.
