EGG PLANT CASSEROLE 
2 c. cubed eggplant, cooked and drained
6 tbsp. butter
1 tbsp. onion, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. poultry seasoning
1 c. cracker crumbs
1 c. Velveeta cheese, cubed
2 eggs, beaten
1 c. milk

Mix, put in greased casserole dish. Bake 325 degrees for one hour. Let stand a few minutes before serving.
