BATTER:

1 c. flour
1 1/4 tsp. baking powder
3 tsp. sugar
1 tsp. salt
1/3 c. milk
1 egg

Mix batter in order given. Add egg plant and stir well. Drop one teaspoon of the egg plant batter in hot deep oil. Cook until brown. First soak the egg plant in salt water for 1 hour and then pour the water off. Add fresh water and cook until tender. Pour off water. Add the egg plant to the batter.
