6 oz. cream cheese 1 c. butter 2 c. flour Blend into dough and chill 1 hour. PECAN CHEWY CENTER: 2 eggs 1 1/2 c. light brown sugar 2 tsp. vanilla 1/2 tsp. salt 1 1/3 c. broken pecan meats Take a heaping teaspoon of dough and roll into one inch sized ball. Place in mini muffin pan. Press dough into pans to make a crust. Filling: mix eggs, sugar, vanilla, salt. Add pecans. Spoon into shells. Bake at 325 degrees for 25 minutes. Remove from oven and allow to cool. Do not overfill the shells as the sugar will caramelize on the pan and they will be hard to remove. Cool about 15 minutes. |
