GREEN CHILI RICE 
Preparation time: 20 minutes. Baking time: 35 minutes. Oven temperature: 350 degrees. Servings: 8-10.

3/4 lb. Monterey Jack cheese
1 1/2 c. sour cream
1 to 2 cans (4 oz. size) chopped green chilies
3 c. cooked rice, well cooled
Salt and white pepper to taste
1/2 c. grated sharp Cheddar cheese

Grate Monterey Jack cheese. Mix Monterey Jack cheese, sour cream, and green chilies together. Butter a 1 1/2 quart to 2 quart casserole dish well. Season rice with salt and white pepper. Layer rice, and the mixture of Monterey Jack cheese, sour cream, and green chilies. Alternate layer of rice and then mixture. Start and end with layer of rice. Bake at 350 degrees for 35 minutes or until slightly golden brown on top. Sprinkle Cheddar cheese on top of casserole during last few minutes of baking.
