1/2 c. butter 1 c. brown sugar, packed 2 eggs, beaten 1 tsp. vanilla extract 1 1/2 c. all-purpose flour 1 1/2 tsp. baking powder 1/4 to 1/2 c. coarsely chopped almonds 1/4 to 1/2 c. chocolate chips and (or) butterscotch chips Preparation time: 15 minutes. Baking time: 20 minutes. 1. Melt butter in saucepan. Stir in sugar. Bring to boil, turn off heat. Cool for 5 to 10 minutes. 2. Rapidly stir in eggs, being careful not to cook them. Add vanilla. 3. In a bowl combine flour and baking powder. Stir into sugar and egg mixture. 4. Pour batter into greased 8 inch square pan. Sprinkle with almonds and chips. 5. Bake at 375 degrees for 20 minutes. TIPS: To increase protein value, especially if used in lunch boxes, use 1 1/4 cups all-purpose flour, 1/3 cup wheat germ, 3 tablespoons dry milk (with price of chocolate chips these days this recipe is also a money saver - only 1/2 or 1/4 bag is used). |
