CASHEW CHICKEN 
2 boneless chicken breasts
2-3 green onions
4-5 mushrooms
1-2 carrots
1-2 stalks celery
1 sm. can pineapple
1/2 c. cashews
1/4 c. oil
1/4 c. soy sauce
1/2 tsp. garlic powder
2 tsp. cornstarch

Slice chicken, marinate in mixture of oil, soy sauce and garlic powder. Slice all vegetables. Drain pineapple and reserve liquid. Stir fry onions and mushrooms in a little oil. Remove onions and mushrooms and stir fry carrots and celery. Remove carrots and celery and stir fry chicken. Combine all stir fried ingredients with pineapple. Add cornstarch to pineapple juice. Return all ingredients to wok and stir to thicken. Add cashews. Serve over rice and noodles.
