HOE CAKES 
2 c. corn meal
1/2 tsp. salt
2 tbsp. bacon fat
1 c. hot water
1 1/2 c. cold water

Mix salt in corn meal, pour on hot water, then add enough cold water to thin the mush so it pours slow out of the bowl. Add fat and drop mush by spoonfuls on a hot griddle or skillet. Turn on both sides until brown. Hoe cakes were cooked in the fire place, on hot coals, or on a hot shovel in the fireplace.
