CHICKEN IN TOMATO/WINE SAUCE 
1 diced onion
1 clove crushed garlic
1 (2-3 lb.) chicken
1 (8 oz.) can tomato sauce
1 c. hot water
Ground pepper
1 (4 oz.) can mushroom stems & pieces
1/2 c. white wine (opt.)

Place all ingredients except wine and mushrooms in a large pot. Cover and simmer 45 minutes over a flame so low that the liquid barely quivers on top. Add drained mushrooms and wine and cook 5 to 7 minutes more. Serve garnished with parsley. About 220 calories.
