JEANNIE'S CROCK-POT GOULASH 
We make this before we leave for skiing all day!

1 lb. ground beef
1 large onion, diced
1 (16 oz.) bag frozen mixed vegetables
1/2 cup rice (not instant)
1 cup water
2 bouillon cubes (chicken, beef or vegetable)

Brown beef and onion in skillet. Drain well and place in Crock-Pot. Cover with vegetables, rice, and water. Add bouillon cubes. Cover, set on LOW and cook for 6 to 8 hours.

Stir before serving and add salt and pepper to taste. My husband likes his with a few dashes of Tabasco sauce on top.
