SWEET NOODLE KUGEL 
Kugel:

8 oz egg noodles, cooked and drained
1/2 stick butter, melted
3 eggs, beaten
1/2 cup plus 1 tablespoon sugar
1 cup non-dairy milk creamer, almond or soy milk
1 cup apricot nectar
1 tsp. vanilla

Topping:

2/3 cup corn flake crumbs
1/4 stick butter, melted
1 tsp. cinnamon
1/4 cup sugar

Mix all kugel ingredients and pour into greased 9x13-inch pan. Mix all topping ingredients and sprinkle over kugel.

Kugel will be very liquid so be careful when putting in oven.

Bake at 350°F for at least an hour. Serve warm or room temperature.

NOTE: Recipe can be easily doubled and frozen.
