FRESH SALSA 
4 to 5 Roma tomatoes
white onion
jalapeno peppers (1 for mild, 2 for hot)
3 sprigs cilantro
lemon juice
lime juice
salt

Combine tomatoes, 1/3 of a large white onion and cilantro into a chopper/grinder (I use the AS SEEN ON TV kind). Add a squirt of lemon juice and a squirt of lime juice and a pinch of salt. Add jalapeno peppers as desired.

I've discovered that it pays to cut the peppers in half and place on opposite sides of the chopper so that the spiciness gets spread more evenly. Grind until the salsa is desired texture.

Great for parties, in Spanish rice or on chicken.
