ZUCCHINI PANCAKES 
1 1/4 c. all-purpose flour
2 tbsp. sugar
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. oil
1 1/3 c. non-fat milk
1 egg, slightly beaten
1 zucchini

In large bowl, with fork, mix first 4 ingredients; add 2 tablespoons oil, milk and egg and stir until flour is moistened. Coarsely grate a whole zucchini (do not peel) and add to the pancake batter. Stir with a fork until well mixed. Cook pancake as desired and serve with maple syrup.
