IMPOSSIBLE SEAFOOD PIE | |
1 pkg. (6 oz.) frozen crabmeat or shrimp, thawed & drained 1 c. shredded process sharp American cheese 1 pkg. (3 oz.) cream cheese, cut into about 1/4 inch cubes 1/4 c. thinly sliced green onions 2 c. milk 1 c. Bisquick baking mix 4 eggs 3/4 tsp. salt Dash of nutmeg Heat oven to 400 degrees. Lightly grease pie plate, 10 x 1 1/2 inches. Mix crabmeat, cheeses and onions in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour into pie plate. Bake until knife inserted halfway between center and edge comes out clean, 35 to 40 minutes. Let stand 5 minutes. Refrigerate any remaining pie. 6 to 8 servings. 1 can (6 ounces) crabmeat or 1 can (4 1/2 ounces) shrimp, well rinsed and drained, can be substituted for the frozen crabmeat or shrimp. IMPOSSIBLE TUNA PIE: Substitute 1 can (6 1/2 ounces) tuna, drained, for the crabmeat. High Altitude (3500 to 6500 feet) : Bake 45 to 50 minutes. |
