COLD SAUCE WITH PASTA 
6-8 ripe tomatoes
2 cloves garlic, minced
6 tbsp. olive oil
4 tbsp. parsley
Salt to taste
Red pepper flakes to taste
1/2 c. green olives, sliced

Peel tomatoes and cut into chunks. Add remaining ingredients, stir and refrigerate. Best when made up 24 hours ahead. Serve over the hot pasta.
